4 -6 cups cooked white rice
1/2 1/2 lb ground pork or 1/2 lb ground chicken
3 tablespoons mirin ( sweet rice wine vinegar )
2 tablespoons soy sauce
6 eggs
2 tablespoons sugar
1 box frozen chopped spinach

Instructions

1.In a bowl, beat eggs, sugar and salt until frothy.
2.Using a 12 inch non-stick pan, add eggs mixture and cook on low heat until half cooked then remove from pan and slice.
3.In a small pot, boil spinach with a pinch of salt.
4.Heat a pan and add oil, cook meat on medium heat until browned.
5.Add seasoning, mirin, soy sauce and cook until the sauce is gone.
6.Assemble by placing rice in the bottom, meat in one portion, spinach in another, and sliced eggs in last, serve and enjoy!
