Ingredients

2 cups boiled rice
2 cups raw rice
3/4 cup split white lentils ( urad )
1 tablespoon dry yeast or 1/2 bottle toddy
3 tablespoons sugar ( or to taste )
1 cup coconut milk
salt

Instructions

1.Rinse the raw rice and split white lentils and soak them in water for at least 5 hours.
2.Grind the boiled rice and soaked rice-lentil mixture separately into a fine paste. Mix them in a large bowl and add salt, sugar, and dry yeast or toddy.
3.Add coconut milk to the mixture and whisk well until it forms a smooth batter.
4.Cover the bowl and let it rest in a warm place for at least 2 hours or until the batter doubles in size.
5.Grease the mold with oil and pour 1/4 cup batter into each mold.
6.Steam the molds for 10 minutes or until the Sannas are cooked.
7.Serve hot with coconut chutney or sambar.
