Ingredients

5 liters pork blood
100 g sultanas
1 orange peel
1/2 loaf fresh white breadcrumbs
250 g pork fat , in small cubes
110 g salt

Instructions

1.In a large pot, heat the pork fat and breadcrumbs over low heat, stirring occasionally, until the fat is melted and the breadcrumbs are lightly toasted.
2.Add the sultanas and orange peel to the pot and cook for 2-3 minutes, stirring constantly.
3.Slowly pour in the pork blood, stirring constantly to prevent lumps from forming.
4.Add the salt and continue to stir until the mixture comes to a boil.
5.Reduce the heat and simmer for 2-3 hours, stirring occasionally, until the mixture has thickened and reduced by approximately half.
6.Remove the pot from the heat and allow the mixture to cool slightly.
7.Pass the mixture through a sieve to remove any lumps or impurities.
8.Spoon the mixture into sterilized jars and seal tightly.
9.Store the jars in a cool, dry place until ready to use.
