Ingredients

1 lb baby new potatoes , whole or 1 lb large potato , cut into four wedges each
2 ounces butter , plus
1 tablespoon butter
1/2 cup fresh breadcrumb
salt and pepper

Instructions

1.Preheat the oven to 375°F.
2.Boil the potatoes in salted water until tender.

4.Put the mashed potatoes into an ovenproof dish.
5.Melt the remaining tablespoon of butter in a frying pan and add the breadcrumbs. Cook until golden brown and crispy.

7.Bake for 15-20 minutes, until the topping is golden brown and the potatoes are heated through.
