1 lb baby new potatoes , whole or 1 lb large potato , cut into four wedges each
2 ounces butter , plus
1 tablespoon butter
1/2 cup fresh breadcrumb
salt and pepper

Instructions

1.Begin by preheating your oven to 200°C (180°C fan)/400°F/gas 6.
2.Boil the potatoes until tender for about 10 minutes.
3.Drain and place them back into the pot with 2 ounces of butter, salt and pepper.
4.Toss everything together so the potatoes are completely coated in the butter.
5.Add a tablespoon of butter to the breadcrumb and mix it before scattering them over the potatoes.
6.Roast in the oven for about 10 minutes until crispy and golden brown.
