Ingredients

250 g all-purpose flour
2 tablespoons oil
1 tablespoon all-purpose flour
1 tablespoon water
4 potatoes , boil , peel and coarsely break into smallish bits
2 tablespoons oil
1 teaspoon cumin seed
1 inch ginger , finely chopped
2 tablespoons coriander leaves , finely chopped
1 -2 green chili , finely chopped
2 teaspoons chat masala
1 teaspoon roasted cumin powder
1/2 teaspoon garam masala
salt
Samosas are traditional Indian savory pies that are widely popular all over India and around the world. Instructions

1.In a large bowl, mix flour, salt, and 2 tablespoons of oil and knead it into a semi-soft dough
2.Keep the dough aside for 20-25 minutes after covering it with a muslin cloth
3.In a pan, heat 2 tablespoons of oil and add cumin seed, ginger, and green chili cook until fragrant.
4.Add the coarsely broken potatoes and mix it properly. Let it cook for 2-3 minutes and add the chat masala, roasted cumin powder, garam masala, and coriander leaves, mix it well.
5.Add salt to taste and cook until the filling is dry and spicy
6.Preheat the oven to 200°C and start making the pies with the dough
7.Roll the dough into thin sheets.
8.Now cut a thin slice into two parts. Pull one side of the straight end to form a cone
9.Fill the cone with the spicy filling and seal the top through little water slurry
10.Arrange all of them on an oiled-surface tray
11.Brush the tops of the samosas with oil and then bake for 20-25 minutes until cooked and golden. Serve with chutney or ketchup.
