1 package Simply Potatoes & reg ; Shredded Hash Browns
10 ounces frozen chopped spinach , thawed and drained and squeezed dry
1/2 cup sun-dried tomato packed in oil , well drained and finely chopped
1 cup goat cheese , crumbled
10 ounces frozen green peas , thawed
1/4 cup matzo meal
4 green onions , finely chopped
2 eggs , beaten
1/2 teaspoon curry powder
salt and pepper
plain yogurt , if desired ( to garnish )
mango chutney , if desired ( to garnish )
olive oil flavored cooking spray

Instructions

1.Preheat oven to 200 degrees F.
2.In a large bowl, mix together Simply Potatoes & reg ; Shredded Hash Browns, chopped spinach, sun-dried tomatoes, goat cheese, green peas, matzo meal, green onions, eggs, curry powder, salt and pepper
3.Heat a large non-stick skillet over medium heat, and spray with olive oil flavored cooking spray.
4.Working in batches, drop 1/4 cup of the mixture into the skillet and gently flatten with a spatula; cook until the bottom is golden brown, then flip and cook until the other side is golden and the center is set.
5.Transfer to a baking sheet and place in the oven to keep warm if needed.
6.Repeat with remaining mixture, spraying skillet with oil between batches.
7.Serve topped with a dollop of plain yogurt or mango chutney if desired.
