Ingredients

200 g yellow lentils ( toor dal )
1 onion , chopped
1 green chili , chopped
2 tomatoes , chopped
1 teaspoon chili powder
1/2 teaspoon turmeric
salt
1 tablespoon sunflower oil
1 teaspoon black mustard seeds
1 teaspoon cumin seed
2 fresh curry leaves
1 tablespoon sambhar powder ( available from Asian grocers )
4 -5 tablespoons tamarind juice
2 sprigs fresh coriander
200 g black gram lentils , soaked in water for 1 hour ( urid or urad )
1 tablespoon rice , soaked in water for 1 hour
1 onion , finely chopped
1 green chili , finely chopped
1 pinch bicarbonate of soda
450 ml sunflower oil , for deep-frying
The Sambhar Vada is a popular South Indian dish that is enjoyed as a snack or breakfast item. The dish consists of a bowl of spicy yellow lentil soup, known as sambhar, and deep-fried spicy doughnuts made from black gram lentils and rice. The soup is flavored with traditional South Indian spices such as mustard seeds, cumin seeds, and curry leaves and is tangy from the addition of tamarind juice. Instructions

1.To make the Sambhar:
2.Rinse the yellow lentils and soak them in water for at least 30 minutes.
3.Drain the lentils and add them to a large pot with chopped onion, green chili, and chopped tomatoes.
4.Add the chili powder, turmeric, salt, and 4 cups of water to the pot and bring to a boil.
5.Reduce the heat to low and simmer the lentils for 30-40 minutes or until they are tender and fully cooked.
6.In a separate pan, heat the sunflower oil and add the black mustard seeds, cumin seeds, and curry leaves. Cook until the mustard seeds start to pop.
7.Add the sambhar powder to the pan and cook for 2-3 minutes.
8.Add this spice mixture to the pot of lentils and stir well.
9.Add the tamarind juice and fresh coriander to the pot, and mix well.
10.To make the doughnuts:
11.Drain the soaked urad dal and rice, and grind them in a food processor to form a thick paste.
12.Mix in the chopped onion, chili, bicarbonate of soda, and a pinch of salt.
13.Heat the sunflower oil in a deep-frying pan.
14.Take a small ball of the dough and flatten it into a small patty shape. Make a small hole in the center of the patty.
15.Deep fry the patties in the hot oil until they turn golden brown.
16.Drain the patties on paper towels to remove excess oil.
17.Enjoy the Sambhar Vada by dipping the doughnuts into the lentil soup!
