Ingredients

2 cups water
1/2 cup sliced cabbage
1/2 cup sliced carrot
1/2 cup fresh green beans , trimmed
1/2 cup sliced green bell pepper
1/2 cup yellow split peas ( tuvar dal )
1 tablespoon ground coriander ( optional )
2 teaspoons sambar powder
1/2 teaspoon chili powder ( optional )
1/2 teaspoon water
1 tablespoon vegetable oil
1 teaspoon cumin seeds
1/2 teaspoon mustard seed ( optional )
1 pinch asafoetida powder ( optional )
1/2 teaspoon ground turmeric
2 tablespoons chopped fresh cilantro
2 tablespoons fresh grated coconut
2 teaspoons tamarind pulp
1 teaspoon brown sugar
salt to taste

Instructions

1.In a large pot, bring water to boil. Add cabbage, carrot, green beans, and bell pepper and let them cook for 5 minutes.
2.Add washed yellow split peas, coriander, sambar powder, chili powder and 1/2 tsp of water. Mix everything together and let it cook for 30 minutes on medium heat.
3.In a small pan, heat vegetable oil, add cumin seeds and mustard seeds. Once the seeds start to splutter, add asafoetida powder and mix it well.
4.Add the mixed ingredients from the small pan into the pot containing the vegetable soup and mix it well.
5.Add turmeric, cilantro, fresh grated coconut, tamarind pulp, brown sugar, and salt to the pot and cook for 15-20 minutes.
6.Serve hot with rice or bread of your choice.
