Ingredients

1 lb round tip steak , cut 1/8 - 1/4 inch thick
pico de gallo ( recipe follows )
3 teaspoons vegetable oil , divided
1 1/2 cups thinly sliced bell peppers , any color
1/2 medium white onion , cut into 1/2-inch wedges
1 medium jalapeno pepper , thinly sliced

8 small tortillas , warmed
3 garlic cloves , minced
1 teaspoon ground cumin
1 1/2 teaspoons ground chipotle chile pepper

3/4 cup chopped tomato
1/4 cup chopped white onion
3 tablespoons chopped fresh cilantro
2 teaspoons minced jalapeno peppers
1 tablespoon fresh lime juice
salt and pepper

Instructions

1.Combine garlic, cumin, chipotle pepper, 1/2 teaspoon salt, 1/4 teaspoon pepper and 2 teaspoons vegetable oil in a bowl.
2.Rub the steak with the garlic mixture.
3.Heat a large skillet over high heat and add one teaspoon vegetable oil.
4.Add the steak until browned then set aside.
5.Add the remaining teaspoon of oil to the skillet along with the onions, peppers, jalapeño, and 1/2 tablespoon salt. Stir-fry for 2 minutes.
6.Add the tomatoes, cilantro, jalapeño, and lime juice. Stir and transfer the steak back into the skillet.
7.Serve samba steak stir-fry in small, warmed tortillas, garnished with a dollop of sour cream, sliced avocado, and cilantro leaves.
