1 cup unsalted butter , plus
1 tablespoon unsalted butter , softened
1 cup confectioners ' sugar
4 large eggs , separated
1 teaspoon pure vanilla extract
1 1/2 cups coarse semolina
2 teaspoons baking powder
1 cup finely ground blanched almond
1 teaspoon grated lemon zest
1 pinch salt
1/2 teaspoon fresh lemon juice
2 1/2 cups granulated sugar
2 cups water
1 small cinnamon stick
4 -5 whole cloves , to taste
1 inch lemon zest , strip
2 tablespoons brandy

Instructions

1.Preheat the oven to 350°F/180°C.
2.Grease a cake pan with 1 tablespoon of softened butter.
3.In a large bowl, beat 1 cup of unsalted butter and confectioners' sugar until light and fluffy.
4.Add egg yolks, vanilla extract, and lemon zest. Mix well.
5.In a separate bowl, mix semolina, baking powder, and ground almond. Add to the egg mixture and mix well.
6.In another bowl, beat egg whites and salt until stiff peaks form. Fold gently into the batter.
7.Pour the batter into the prepared cake pan. Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
8.In a saucepan, mix granulated sugar, water, cinnamon stick, cloves, and lemon zest. Bring to the boil, stirring constantly. Reduce the heat and let it simmer for 10 minutes.
9.Add in the lemon juice and brandy. Stir well and remove from the heat.
10.Pour the syrup slowly onto the hot cake. Let the cake cool and absorb the syrup for about an hour before serving.
