1 lb pork shoulder , cut into 3/4 inch cubes
1/2 cup grape seed oil
1/2 cup flour
2 medium onions , chopped
6 cloves garlic , minced
2 cups beef broth
2 cups chicken broth
2 dried ancho chilies
2 dried red new mexican chilies
1 dried chipotle chili
2 dried passila chilies
1 1/2 tablespoons cumin seeds
1 tablespoon Mexican oregano
1 can tomato sauce
1 teaspoon sugar
1 jalapeno chili , minced

Instructions

1.Preheat oven to 350F.
2.Heat oil in a large Dutch oven over high heat.
3.Dredge the beef and pork in flour, shaking off any excess, and add to the Dutch oven.
4.Cook, stirring occasionally, until browned on all sides, about 6 minutes.
5.Add onions and garlic and cook until softened, about 5 minutes.
6.In a separate skillet, toast the ancho chilies, new mexican chilies, chipotle chili, and passila chilies until fragrant.
7.Add the toasted chilies, cumin seeds, and Mexican oregano to a spice grinder and grind to a fine powder.
8.Add the powdered spices to the Dutch oven with the beef and pork and cook, stirring, for 1 minute.
9.Add the beef and chicken broths, tomato sauce, sugar, and minced jalapeno chili.
10.Bring to a simmer and transfer the Dutch oven to the preheated oven.
11.Bake, stirring occasionally, until the meat is tender and the sauce has thickened, about 3 hours.
12.Serve hot with rice or cornbread.
