Ingredients

2 lbs boneless pork chops
6 hard-boiled eggs ( unshelled )
2 1/2 ounces ghee
2 red chilies or 2 dried red chilies
1 teaspoon turmeric
1 inch orange peel , minced
1/4 teaspoon salt
8 small turnips , peeled
3 cardamom pods
1/4 teaspoon nutmeg , grated
1 teaspoon cinnamon
1 1/2 teaspoons coriander seeds , ground or 1 1/2 teaspoons coriander powder
2 pimento pepper ( red cherry peppers ) or 1 bell pepper , julienned
1 1/2 inches ginger , grated or 1 teaspoon ginger powder
2 teaspoons cilantro , minced
Saluna Shikar Mhaans (Pork Curry W-Eggs) is a famous recipe from the North Eastern part of India. It combines a good mix of spices, making the dish flavorsome, filling, and satisfying. It is an excellent main dish to serve with rice. The pork cubes are tender and juicy, making it easy to consume. The addition of tender boiled eggs to the dish packs an extra delicious punch.

Instructions

1.Cut the pork into 1- inch cubes and set aside.
2.Boil the eggs until hard (around 8-10 minutes), cool them, and set them aside.
3.Heat up a pan with 2 ounces of ghee and fry 2 red chilies or 2 dried red chilies for 1 minute.
4.Add the pork cubes and brown them till no pink is left.
5.Add salt, turnips, cardamom pods, red chili pepper or bell pepper, ginger, coriander powder or ground coriander, turmeric, minced orange peel, nutmeg, cinnamon, and 2 1/2 cups of water to the pan.
6.Bring the mixture to a boil, then lower the heat to medium-low, cover, and let simmer for an hour or until pork is tender.
7.Peel the hard-boiled eggs and add them to the pan, leaving for around 15 minutes more.
8.Garnish with fresh cilantro and serve with rice.
