Ingredients

175 g digestive biscuits , crushed
85 g butter , melted
397 g caramel sauce ( I used butterscotch ice cream topping , the best substitute I could find ! )
1 teaspoon sea salt
300 g bittersweet chocolate , broken into chunks ( Try to get 70 % cocoa )
600 ml double cream
25 g icing sugar
2 teaspoons vanilla extract
chocolate-covered caramel candie , for garnish

Instructions

1.Preheat the oven to 350°F (180°C) and grease a 9” (23cm) springform cake tin
2.Mix the melted butter with the crushed biscuits and press the mixture into the bottom of the cake tin, refrigerate for 10 minutes
3.In a pan, bring the caramel sauce and half the sea salt to a boil and stir for 1 minute
4.Pour the hot caramel over the biscuit base
5.Melt the chocolate in a bowl over simmering water, stirring often
6.Add 300ml double cream and 25g icing sugar to another bowl and whip to soft peaks
7.Add 2 teaspoons vanilla extract to the chocolate and mix, then set aside
8.Add the remaining double cream and sea salt to the chocolate and fold gently until combined
9.Add a cup of whipped cream to the chocolate mix, folding gently until combined
10.Pour the chocolate mix over the caramel layer in the tin and smooth the top
11.Refrigerate for at least 2 hours, or until set
12.Cut into slices and garnish with chopped chocolate-covered caramel candies
