6 bosc pears ( around 6 ounces each )
1 1/2 lbs coarse salt
1 cup white sugar
2 tablespoons unsalted butter , cut into little pieces
1/3 cup heavy cream

Instructions

6.In a medium saucepan, melt sugar over medium heat, swirling pan until caramel is a deep amber color, approx. 5-6 minutes.
7.Remove the pan from the heat and stir in butter, and then slowly pour in heavy cream, stirring constantly.
8.Return the pan to medium heat and cook mixture, stirring occasionally, until the caramel has dissolved. Remove the pan from heat.
9.Once the pears are roasted, let them cool for 5 minutes.
10.Serve each pair in a shallow bowl with a spoonful of warm caramel sauce drizzled over the top.
