Ingredients

1/2 teaspoon black peppercorns
1/2 teaspoon green peppercorn

2 lbs shrimp , shells on
2 teaspoons salt , divided
2 tablespoons vegetable oil or 2 tablespoons peanut oil
4 garlic cloves , chopped
1 cup fresh cilantro leaf , roughly chopped

Instructions

1.In a small skillet, heat the black, green, red, and white peppercorns over medium heat. Toast them for about 3 minutes, until fragrant.
2.Add the freshly toasted peppercorns into a spice grinder, grind them finely, and transfer them to a small bowl.
3.In a large bowl, mix the shrimp with a teaspoon of salt.
4.Heat the vegetable or peanut oil in a large pan over high heat.
5.Once hot, add the garlic and stir-fry for 30 seconds.
6.Add the shrimp and stir-fry for 2 minutes, or until they turn pink and are just cooked through.
7.Turn off the heat and add the remaining teaspoon of salt and the ground peppercorns to the shrimp. Mix them well.
8.Transfer the shrimp to a serving platter and sprinkle them with cilantro leaves. Serve hot.
