Ingredients

1 lb raw jumbo shrimp , peeled and intestinal threads removed
vegetable oil , for deep-frying
1 bunch scallion , cut into 1 1/2in pieces
6 garlic cloves , thinly sliced
1 inch piece fresh gingerroot , peeled and finely shredded
2/3 ounce sea salt , plus extra for soaking
2/3 ounce ground mixed peppercorns , and
chile , such as black pepper , green pepper , chilli powder , cayenne pepper and szechuan pepper
1 bunch fresh cilantro , chopped

Instructions

1.Soak the peeled shrimp in saltwater for about five minutes and then drain it well.
2.Heat vegetable oil to 180°C in a wok.
3.Fry the shrimp until they turn pink and become crispy. Remove from the wok and drain the excess oil.
4.Heat a small amount of vegetable oil in another pan. Stir-fry the scallions, ginger and garlic until fragrant.
5.Add sea salt, ground mixed peppercorns, and chile to the pan. Stir-fry for another minute before adding the crisp shrimp. Toss everything together until well combined.
6.Finally, sprinkle fresh cilantro over the top and serve hot with rice or noodles.
