Instructions

1.Preheat the oven to 425 degrees Fahrenheit (218 Celsius).
2.Rinse and dry the tomatillos and slice them in half.
3.In a large mixing bowl, toss the tomatillos with the chopped serrano chilies, roughly chopped cilantro, garlic, and white onions until well combined.
4.Spread the mixture evenly on a baking sheet and sprinkle with sea salt.
5.Roast in the preheated oven for 20-25 minutes until the vegetables browned and softened.
6.Remove the sheet from the oven and let it cool for 10-15 minutes.
7.Transfer the roasted vegetables into the food processor, along with any remaining juices in the pan, and process to the desired consistency.
8.Transfer to a serving bowl and garnish with 2 tablespoons of chopped cilantro.
