24 pounds tomatoes
1 can tomato paste
1/2 bunch cilantro
16 jalapeno chile peppers

6 large green bell peppers , chopped
6 large onions , chopped
9 tablespoons salt
1 cup distilled white vinegar
1/2 cup brown sugar
3/4 cup cornstarch
1/2 cup water

Instructions

1.Heat oven to 350°F. Line 2 large rimmed baking sheets with foil.
2.Wash tomatoes, remove stem ends and cut in half crosswise. Remove cores.
3.Carefully scoop out seeds and juice with your fingers into a fine-mesh sieve set over a bowl. Press seeds to extract as much liquid as possible. Reserve liquid.
4.Arrange tomato halves, cut-side down, on baking sheets in a single layer.
5.Broil one sheet of tomatoes until skins are blackened and blistered, about 20 minutes.
6.In a food processor, combine the blackened tomatoes, tomato paste, cilantro, jalapenos and garlic.
7.Process until mixture is finely chopped, but not pureed.
8.In a large bowl, combine chopped tomatoes, green peppers, onions, salt and reserved seed juice and stir well.
9.In a medium bowl, whisk together vinegar, brown sugar, cornstarch, water, and 3 cups of the tomato mixture.
10.Add to the large bowl and stir well.
11.Transfer salsa to sterilized jars, leaving 1/4-inch headspace.
12.Wipe rims of jars with a damp cloth.
13.Screw on lids.
14.Place jars in a hot water bath and boil gently for 15 minutes.
15.Store in a cool, dark place until ready to use.
