Ingredients

1/2 cup sun-dried tomato ( not packed in oil )
1 cup boiling water
1 large onion , chopped ( about 2 cups )
3 garlic cloves , minced
2 tablespoons unsalted butter
1 can whole tomatoes with juice
Salsa Di Pomodoro D'inverno is a traditional Italian tomato-based sauce that translates to “Winter tomato sauce”. Unlike the summertime tomato sauce that uses fresh tomatoes, this version uses sun-dried tomatoes which are abundant in winter months. This sauce is a perfect recipe for the colder months that adds a comforting and warming touch to many dishes.

Instructions

1.In a bowl, soak the sun-dried tomatoes in boiling water for 10 minutes.
2.Drain the tomato water and chop the rehydrated tomatoes into small pieces.
3.Heat the butter in a pan and sauté the onions until they turn transparent. Add the garlic and continue to sauté until the garlic is fragrant but not browned.
4.Add the can of whole tomatoes along with their juice and the chopped, rehydrated sun-dried tomatoes.
5.Increase heat and bring mixture to a simmer. Continue to simmer for 20 to 25 minutes until the mixture thickens.
6.Transfer the mixture to a blender and blend until smooth.
7.Transfer back to the pan and continue to simmer on low heat for additional 5 minutes.
8.Turn off heat, let the sauce to cool down to room temperature before serving.

PROS

Salsa Di Pomodoro D’inverno is a healthy and flavorful sauce that pairs well with almost any pasta variety, chicken or fish.
It is versatile and can be made ahead of time, as it can stay fresh in the refrigerator for up to a week.

CONS

This sauce takes longer than store-bought products, and you need to plan accordingly when making it if you want to have it for dinner.
Additionally, sun-dried tomatoes packed in oil aren’t preferable for this recipe.
