Ingredients

1 1/2 cups red grape tomatoes

1 medium white onion , unpeeled , cut in half
1/2 medium red onion , unpeeled , cut in half
2 garlic cloves , unpeeled
1 whole jalapeno
3/4 cup pineapple , cut into small size pieces
2 tablespoons apple cider vinegar
2 tablespoons fresh parsley , minced
1 tablespoon fresh pineapple sage , cut into thin ribbons
1/2 teaspoon salt
3 pineapple sage , blossoms

Instructions

1.Heat a large cast iron skillet over high heat.
2.Add the grape tomatoes, diced bell pepper, garlic cloves, and jalapeno. Cook for 8-10 minutes, stirring occasionally, until everything is well charred.
3.Add the pineapple and cook for an additional 2-3 minutes, until it is lightly browned.
4.Remove the skillet from the heat and set it aside to cool.
5.Once everything has cooled down, scrape the charred tomato and onion skins off and discard them.
6.In a large bowl, combine the charred vegetables, apple cider vinegar, parsley, pineapple sage, and salt. Mix everything together well.
7.Top with the pineapple sage blossoms.
