Ingredients

3 lbs beef flank steak or 3 lbs skirt steaks
1 whole onion , cut in half
2 peeled garlic cloves
1 bay leaf
1 tablespoon salt
8 cups water
1 head iceberg lettuce , shredded
4 medium tomatoes , diced
1 -5 canned serrano peppers or 1 -5 jalapeno chile , diced
1 cup of sliced greed olive
1/4 cup olive oil
1/4 cup white vinegar
2 tablespoons dry oregano
salt and pepper

Instructions

1.In a large pot, add the beef flank or skirt steak, onion, garlic, bay leaf, salt and water.
2.Bring to boil and let it simmer for 2-3 hours, until the meat is tender.
3.Remove from heat and let it cool. Once cooled, shred the beef with a knife or a fork.
4.In a large bowl, mix the shredded beef, shredded lettuce, diced tomatoes, diced serrano peppers/jalapeno chile, sliced olives, olive oil, white vinegar, dry oregano, salt and pepper.
5.Mix well and serve chilled.
