1 lb salmon , cut into 4 pieces
1 fennel , sliced thinly

4 tablespoons olive oil
1 can tomato paste
4 garlic cloves , crushed and chopped

1 teaspoon cajun seasoning
1 teaspoon salt

Instructions

1.Prep the salmon by removing the skin and seasoning it with salt and pepper.
2.Blanch the swiss chard in boiling water for 30 seconds then drain and set aside.
3.Cook the penne in a pot of boiling salted water until al dente then drain.
4.In a pan, heat up 2 tablespoons of olive oil over medium-high heat then gently cook the sliced fennel for 5 minutes or until they have softened. Set aside.
5.In the same pan, add the remaining olive oil and garlic then cook for 30 seconds or until fragrant. Add the tomato paste and cajun seasoning then cook for another minute.
6.Add the lemon juice and 1/2 cup of water into the pan, then stir until combined. Place the salmon pieces in the pan skin side down and cook for 4-5 minutes or until the skin is crispy. Flip the salmon and cook for another 2 minutes, or until the salmon is cooked through.
7.Serve the salmon on a bed of cooked penne, swiss chard, and fennel.
