Ingredients

1 cup sushi rice , rinsed until water runs clear
1 cup water
2 tablespoons mirin
2 tablespoons rice vinegar
2 teaspoons salt
2 tablespoons sugar
1/4 lb salmon , thin slices ( found in Japanese markets )
3 tablespoons low-fat cream cheese , softened
3 tablespoons low-fat mayonnaise
1 pinch fresh ground black pepper
1 pinch garlic powder
1/2 teaspoon instant minced onion
4 sheets nori
Salmon sushi is a classic Japanese dish that involves fresh slices of salmon, rice, and nori seaweed. Instructions

1.Combine the sushi rice and water in a pot and bring to boil. Reduce the heat to low, cover, and simmer for 20 minutes. Turn off the heat and let it rest for 10 minutes.
2.In a separate small saucepan, combine mirin, rice vinegar, sugar, and salt. Stir until all the solids are dissolved. Cook on medium heat for 2-3 minutes. Then, set it aside to cool.
3.In a small bowl, mix cream cheese, mayonnaise, black pepper, garlic powder, and instant minced onion. Set it aside.
4.Lay a sheet of nori on a flat surface, and use a spoon to spread ¼ of the cooked sushi rice on the nori sheet, leaving a bit of exposed nori on one side. Spread a thin layer of cream cheese mixture over the rice. Then place several strips of salmon on top of cream cheese mixture.
5.Using the exposed nori to help, slowly and tightly roll up the sushi and seal the edge with a bit of water. Repeat the process with remaining nori sheets.
