Ingredients

1 cucumber , cut into wafer-thin slices
salt and pepper
300 g cooked salmon or 300 g smoked salmon
50 g butter , plus an extra knob
50 g flour
350 ml milk
3 large eggs
1 tablespoon freshly grated parmesan cheese
white wine vinegar
1/2 teaspoon sugar
1 tablespoon chopped dill

Instructions

1.Preheat oven to 190°C/gas 5.
2.Season the cucumber slices with salt and pepper, then put aside.
3.Next, finely chop the cooked salmon and set aside.
4.Melt butter in a saucepan, then stir in flour and cook for a couple of minutes.
5.Gradually whisk in the milk until the sauce thickens.
6.Beat the egg yolks and add them to the saucepan together with Parmesan, salt, pepper, vinegar, sugar, and dill. Pour in the finely chopped salmon and stir well.
7.Finely chop the egg whites, then whisk them until stiff with a pinch of salt and fold into the mixture.
8.Now place a knob of butter into the base of the souffle dish and pour in the mixture. Using the back of a spoon, even the surface.
9.Place in the oven and bake for 30-35 minutes. Serve with the cucumber slices. Bon Apetit!
