3 tablespoons unsalted butter , softened
1/8 teaspoon salt
1/4 lb thinly sliced smoked salmon , finely chopped
1/3 cup finely chopped sweet onion such as vidalia onion
german-style rye bread or crispbread cracker ( 4 thin 3 1/2-inch-square slices German-style rye bread or 6 to 8 rye crispbread crackers )
2 tablespoons finely chopped fresh chives ( optional )

Instructions

1.Heat the oil in a large pot to 300°F.
2.Slice the beet on a mandoline into 1/8 inch slices.
3.Fry the beet slices for 1-2 minutes or until crispy.
4.Remove the beets from the oil and drain on paper towels.
5.In a medium bowl, stir together the toasted caraway seeds, softened butter, and salt.
6.Spread the caraway butter onto the slices of German-style rye bread or rye crispbread crackers, then top each with a spoonful of finely chopped smoked salmon.
7.Add a few crispy beet chips to each canape and sprinkle with chopped sweet onion and fresh chives, if desired.
8.Serve immediately.
