Ingredients

4 cups all-purpose flour

1 can salmon , drained and de-boned
8 -10 small potatoes ( boiled or steamed )
1/4 - 1/2 cup butter or 1/4-1/2 cup margarine
1 1 cup evaporated milk or 1 cup water
1/4 cup fresh chives , finely chopped
2 teaspoons dried basil
salt and pepper

Instructions

1.Preheat oven to 375 degrees Fahrenheit.
2.In a large mixing bowl, combine 4 cups all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.
3.Cut in 1/2 cup shortening or pure lard until the mixture is crumbly. Slowly add 1 cup water, stirring until a dough forms.
4.On a floured surface, roll out the dough to 1/4 inch thickness. Use the dough to line a deep pie dish or a 9x13 inch baking dish.
5.In a separate mixing bowl, mash boiled or steamed small potatoes with 1/4-1/2 cup butter or margarine, 1 cup evaporated milk or water, 1/4 cup fresh chives, 2 teaspoons dried basil, salt, and pepper to taste.
6.Add drained and de-boned salmon to the potato mixture, breaking it up with a fork and stirring gently to incorporate.
7.Pour the salmon mixture into the prepared pie crust.
8.Roll out remaining dough and place on top of salmon mixture. Trim edges and crimp the edges together. Cut 4 slits on the top of the pastry to vent.
9.Bake in preheated oven for 1 hour or until pastry is golden brown.
10.Let cool for 10 minutes before serving.
