12 sheets fresh phyllo pastry
4 salmon fillets , skin removed

Instructions

1.Start by making the Thai butter. Mix the softened butter, Thai red curry paste, lime zest, and chopped coriander until well combined.
2.Preheat the oven to 200ºC/180ºC fan/gas mark 6.
3.Take a sheet of phyllo pastry and brush it with the Thai butter.
4.Place a salmon fillet in the middle of the pastry sheet and wrap the sides around the fish to create a parcel.
5.Repeat the process with the remaining pieces of salmon and pastry.
6.Place the salmon parcels on a baking sheet and cook in the preheated oven for 20-25 minutes or until the pastry is golden brown and the salmon is cooked.
7.Serve immediately and enjoy!
