Ingredients

2 lbs salmon fillets
4 ounces blue cheese ( I like Stilton but use any creamy blue cheese )
2 ounces soft butter
1/2 lemon , juice of
1 head white chicory or 1 head fresh spinach
2 sheets puff pastry
Salmon en croute is a classic French dish that combines rich salmon with flaky puff pastry and a flavorful filling. In this recipe, blue cheese and spinach (or chicory) are used to create a unique twist on the traditional dish. Instructions

1.Preheat the oven to 400°F (200°C).
2.Rinse and pat dry the salmon fillets, removing any bones or skin.
3.Cut the blue cheese into small pieces and mix it with the butter and lemon juice.
4.Shred the chicory (or spinach) into small pieces.
5.Roll out the puff pastry on a floured surface.
6.Place one salmon fillet on the pastry and top it with half of the blue cheese mixture and half of the chicory (or spinach).
7.Cover the salmon with the other salmon fillet and repeat the layers of blue cheese mixture and chicory (or spinach).
8.Fold the edges of the pastry up and over the salmon, pinching them together to seal.
9.Brush the pastry with egg wash.
10.Place the salmon en croute on a baking sheet and bake for 25-30 minutes, or until the pastry is golden brown and the salmon is cooked through.
