Ingredients

500 g desiree potatoes
700 g salmon fillets
1 garlic clove , peeled
2 tablespoons coriander , coarsely chopped fresh leaves
3 green onions , sliced finely ( green shallots )
1 egg , beaten lightly
10 g fresh ginger , grated finely
1 teaspoon lime zest , finely grated

2 cups coarse fresh breadcrumbs
3/4 cup plain flour
1 egg , beaten lightly ( extra )
2 tablespoons milk
olive oil ( for shallow-frying )
1 kg russet burbank potato
peanut oil , for deep-frying
2 teaspoons dried shallots
1 teaspoon chili flakes
1 tablespoon salt or 1 tablespoon flaked sea salt
Salmon cakes are an excellent source of protein which can be served as an entrée or as part of a meal. These salmon cakes have a light, crispy texture and are packed with flavor. The chilli salt chips are a perfect combination with the salmon cakes. The dish is nicely balanced, and the flavors are perfectly complemented by the tangy tomato sauce. This easy and delicious recipe is perfect for a weekend meal, and it will surely please a hungry crowd.

Instructions

1.Peel and cut the desiree potatoes in half and boil it for 15 minutes or until it softens.
2.Drain the potatoes and return back to the pot. Add salt, pepper, and 1 tablespoon olive oil. Mash well until smooth and let it cool.
3.Finely chop salmon fillets and garlic into small pieces.
4.In a bowl, mix the salmon, garlic, coriander, green onions, egg, ginger, lime zest, a pinch of salt, and 1 cup of breadcrumbs.
5.Divide the mixture into 8 portions and shape them into patties. Dust each patty in flour, then dip them in the extra egg followed by the rest of the breadcrumbs until they are evenly coated.
6.Preheat your oven to 200°C. Place the russet burbank potatoes in the oven for 30 minutes.
7.In a pot preheated with peanut oil, deep-fry the russet burbank potatoes for 5-7 minutes or until they turn golden brown.
8.Sprinkle the dried shallots, chili flakes, and salt on the fries.
9.Heat the olive oil in a frying pan over medium heat. Shallow-fry the salmon cakes for 3 minutes each side or until they are golden brown.
10.Transfer the salmon cakes on paper towels to remove any oil and serve with chilli salt chips and tomato sauce on the side.
