20 ounces fresh spinach
2 teaspoons lemon juice
1 dash nutmeg
2 lbs salmon fillets
8 sheets phyllo pastry
1/3 cup butter

3/4 cup mushroom , chopped
3/4 cup vegetable stock
2/3 cup water
1/4 teaspoon salt
1 dash pepper
1/4 cup wild rice , rinsed
1/3 cup long grain rice
1/4 cup white wine vinegar
1/4 cup dry white wine
2 tablespoons minced onions
1/4 teaspoon salt
1/4 teaspoon pepper
2/3 cup unsalted butter
1/4 cup half-and-half
1 tablespoon chopped dill
Salmon and Rice Phyllo Packets are a delicious and healthy meal that's perfect for any occasion. This dish combines the delicate flavor of salmon with the earthy taste of wild rice and the subtle spice of sautéed spinach. Wrapped in crispy phyllo pastry, these packets are the perfect blend of indulgent and nutritious. Instructions

1.Preheat the oven to 375 degrees F (190 degrees C).
2.In a large skillet, sauté the spinach with the lemon juice and nutmeg over medium-high heat until wilted and bright green. Remove from the heat and let cool.
3.Salt and pepper the salmon fillets.
4.In another large skillet, melt 1/3 cup butter over medium heat. Cook the onions and mushrooms for 5-7 minutes or until tender. Add the vegetable stock, water, salt, pepper, wild rice, long grain rice, and white wine vinegar. Increase the heat to high and bring to a boil. Reduce heat, cover, and simmer for 35-40 minutes or until the rice is cooked.
5.Brush 2 sheets of phyllo pastry with 2 teaspoons of melted butter, layering them on top of each other. Repeat for the remaining 6 sheets.
6.Place a salmon fillet in the center of each phyllo stack and spoon on some of the cooked rice. Top the rice with a spoonful of sautéed spinach. Fold the phyllo over the salmon and spinach to create a packet. Brush generously with melted butter.
7.Bake the phyllo packets for 20-25 minutes or until the pastry is golden and the salmon is cooked through.
