This Salmon and Broccoli Lasagna recipe is a delicious and healthy way to enjoy lasagna. Instructions

1.Preheat the oven to 375°F.
2.Bring a large pot of salted water to boil. Add the broccoli and cook for 2 minutes or until tender. Remove with a slotted spoon and rinse with cold water. Set aside.
3.Place the salmon fillets in a 9x13-inch baking dish and season with salt and pepper. Cover with foil and bake for 20 minutes or until the salmon is cooked through.
4.In a medium saucepan, whisk together the milk, Dijon mustard, vegetable bouillon granules, and cornflour. Cook over medium heat, whisking constantly, for 5-7 minutes or until the mixture has thickened.
5.Add the sliced mushrooms, grated cheddar cheese, dill, and parsley to the saucepan. Stir to combine.
6.Spread a thin layer of the sauce on the bottom of a 9x13-inch baking dish. Top with a layer of lasagna noodles, broken into pieces to fit if necessary. Spread half of the remaining sauce over the noodles. Arrange the broccoli on top of the sauce. Top with another layer of noodles and the remaining sauce.
7.Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes or until the top is golden brown and bubbling. Let stand for 10 minutes before slicing and serving.
