Ingredients

1 kg lamb , cut into 1 inch cubes
3 onions , finely chopped
2 tablespoons coriander , finely chopped
6 cardamom pods
salt and pepper
2 cups milk
3 cups water
2 cups rice
4 tablespoons butter , melted
Saliq is a popular dish in Pakistan, particularly in North Punjab. The word Saliq is derived from the Urdu word ''salan'' which means curry and ''chaawal'' which means rice. This dish is often served during special occasions such as weddings, festivals, and other celebrations. It is a one-pot dish that is perfect for feeding a crowd. The lamb is marinated with fragrant spices, then simmered in milk and water until tender. The rice is added to the pot and cooked until fluffy and infused with the flavors of the lamb and spices.

Instructions

1.Rinse the rice in cold water and let it soak for 15 minutes.
2.Heat butter in a pot and add onions. Fry until golden brown.
3.Add lamb and fry for 10 minutes until browned.
4.Add coriander, cardamom pods, salt, and pepper, and fry for 2 minutes.
5.Add water and bring to a boil. Cover the pot, reduce the heat to low and let it cook for 25-30 minutes or until the meat is tender.
6.Add milk and rice to the pot, stir well to combine.
7.Cover the pot with a lid and cook on low for another 20-25 minutes until the rice is cooked and the liquid has been absorbed.
8.Remove from heat and let stand for 5 minutes. Fluff the rice with a fork before serving.
