Ingredients

2 lbs chicken breasts , cut to 1-inch cubes
2 tablespoons vegetable oil
1 teaspoon cumin seed
5 curry leaves
2 onions , chopped
6 garlic cloves
1/2 inch ginger , peeled
1 teaspoon cinnamon
1 teaspoon garam masala
1/2 teaspoon turmeric
4 green chilies ( I use serrano or jalapeno with seeds , but you can take the seeds out if you do n't like your food spi )
1 lb potato , cut into small straws
1 tablespoon olive oil

Instructions

1.In a pan, heat vegetable oil over medium-high heat.
2.Add cumin seeds and curry leaves, and fry until the cumin seeds crackle.
3.Add chopped onions and fry until golden brown.
4.While the onions are cooking, make a paste with garlic, ginger, cinnamon, garam masala, turmeric, and green chilies in a blender.
5.Add the paste to the pan and fry for 2 minutes.
6.Add the chicken pieces and fry until browned.
7.Add 1/2 cup of water, salt to taste, and let it simmer for 10 minutes or until the chicken is cooked.
8.In a separate pan, heat olive oil over medium heat and fry the potato straws until crispy.
9.Serve the chicken curry hot, topped with potato straws.
