Salade Liégeoise is a classic French salad that originates from the city of Liège in eastern Belgium. The recipe typically features green beans, potatoes, and smoked bacon, all tossed in a warm vinaigrette. This hearty dish is perfect for a summer cookout or potluck and can be served as a side dish or a main course. The combination of savory bacon, tender potatoes, and crisp-tender green beans is a crowd-pleaser that will please even the pickiest eaters. While it is not the healthiest recipe out there, it is a delicious and indulgent treat that can be enjoyed in moderation as part of a balanced diet.

Instructions

1.Bring a large pot of salted water to a boil and blanch the green beans for 2-3 minutes until just tender. Remove from the pot and rinse with cold water to stop the cooking process.
2.In the same pot, cook the potatoes in the boiling water for 15-20 minutes until tender. Drain and slice into bite-sized pieces.
3.Meanwhile, slice the bacon into thin strips and fry in a large pan over medium heat until crisp. Remove with a slotted spoon and set aside on paper towels to drain.
4.In the same pan, melt the butter and add the chopped parsley and scallions. Cook for 1-2 minutes until fragrant.
5.Add the red wine vinegar and mix well, scraping up any browned bits from the bottom of the pan.
6.In a large bowl, combine the blanched green beans, sliced potatoes, and crispy bacon. Pour the warm vinaigrette over the top and toss gently to combine.
7.Serve the Salade Liégeoise warm or at room temperature, garnished with additional chopped parsley and scallions if desired.
