Ingredients

1/3 cup walnut pieces

8 slices baguette
1 large garlic clove , peeled and cut in half
4 ounces chevre cheese , cut into 8 slices ( use the round , log shaped type )
2 ounces mesclun
1 small red onion , peeled and thinly sliced
2 tablespoons olive oil
1 tablespoon walnut oil
1 1/2 tablespoons tarragon vinegar
1 garlic clove , peeled and crushed
salt and pepper , to taste

Instructions

1.Preheat the oven to 350F.
2.Spread the walnut pieces in a single layer on a baking sheet.
3.Roast the walnut pieces for 8-10 minutes, or until they are fragrant and lightly browned.
4.Sprinkle the sea salt over the roasted walnut pieces and set aside to cool.
5.Preheat the broiler.
6.Arrange the slices of baguette on a baking sheet and toast them under the broiler until they are golden brown.
7.Rub cut garlic over the surface of each toasted baguette slice.
8.Top each slice of toasted baguette with a slice of chevre cheese and broil until the cheese is melted and bubbly.
9.In a medium mixing bowl, whisk together the olive oil, walnut oil, tarragon vinegar, and crushed garlic until well combined.
10.Season with salt and pepper to taste.
11.Toss the mesclun and thinly sliced red onion with the vinaigrette.
12.Divide the mesclun salad evenly between four plates and top each salad with two slices of broiled goat cheese toast and a sprinkle of roasted walnut pieces.
13.Serve immediately.
