1/2 pound new potatoes , quartered

1/2 onion , thinly sliced
1 can tuna
1/3 pound fresh green beans - rinsed , trimmed and blanched
1/2 pound mixed salad greens
1 cup lemon vinaigrette
3 hard-cooked eggs , quartered
3 roma ( plum ) tomatoes , thinly sliced
1 tablespoon capers
4 anchovy filets

Instructions

1.Boil the potatoes for 10-12 minutes until tender. Drain and let cool.
2.In a large bowl, combine the mixed salad greens, sliced onion, blanched green beans, sliced tomatoes, and chopped parsley. Toss with lemon vinaigrette.
3.Divide the salad greens among four plates.
4.Top each salad with tuna, quartered hard-boiled eggs, nicoise olives, and anchovy filets.
5.Sprinkle with capers.
