Ingredients

1 ounce unsweetened chocolate , coarsely chopped
1 ounce semisweet chocolate , coarsely chopped
3 tablespoons refined soft coconut oil
1 3/4 cups cooked black beans , drained and rinsed well ( I cooked my own )
3 tablespoons clear agave nectar or 3 tablespoons light agave nectar
3 packets vanilla flavoured stevia
2 packets vanilla flavoured stevia ( extra , for sunbutter version )
1/2 cup Dutch-processed cocoa powder
1/4 cup sunflower seed butter ( SunButter ) or 1/4 cup nutella ( for a non-vegan variation )
fine sea salt , to sprinkle
This fudge recipe puts a healthy spin on a classic treat by using black beans as the secret ingredient. These legumes blend up into a smooth, velvety texture with the help of coconut oil and sunflower seed butter, which act as natural emulsifiers. Instructions

1.Line a 8x5 inch loaf pan with parchment paper, and set aside.
2.In a small saucepan set over low heat, gently melt the unsweetened and semisweet chocolate with the softened coconut oil until smooth and glossy.
3.In a food processor or blender, purée the cooked black beans with the melted chocolate mixture, agave nectar, and vanilla flavoured stevia until totally smooth and creamy.
4.Add the Dutch-processed cocoa powder and process until it is well incorporated.
5.Add the sunflower seed butter and pulse a few times until it is well distributed throughout the batter.
6.Taste and adjust the sweetness to your liking with a few extra packets of stevia, if necessary.
7.Scrape the fudge mixture into the prepared loaf pan and spread it out evenly with a spatula. Sprinkle with a little extra sea salt and set aside at room temperature for 15-20 minutes, or until just set.
8.Transfer to the fridge and chill until firm enough to slice into neat squares, at least 2 hours or up to overnight.
9.Store the finished fudge in an airtight container in the fridge for up to 1 week, or freeze for longer-term storage.
