1 sheet dried kelp ( Konbu , about 4 inches in length )
2 quarts water
1 teaspoon hawaiian sea salt ( you can use coarse salt or kosher salt , start out with less salt if using kosher )
1 teaspoon msg ( Aji No Moto ) ( optional )

Instructions

1.In a large pot, soak the dried shrimp and shiitake mushrooms in 2 quarts of water for 30 minutes.

4.Remove the ginger and kelp from the pot.
5.Season the broth with Hawaiian sea salt and msg (optional).
