Instructions

1.Preheat the oven to 450 degrees F (230 degrees C).

Roast for 25 to 35 minutes, or until the internal temperature of the beef reaches 135 degrees F (57 degrees C) for medium rare or 145 degrees F (63 degrees C) for medium. Transfer the beef to a cutting board and let it rest for 10 minutes before slicing.
4.While the beef is resting, make the sauce. In a medium saucepan, cook the shallot over medium heat until it is tender and translucent. Add the merlot and beef broth, and bring the mixture to a boil. Reduce the heat and simmer for 10 minutes, or until the mixture has reduced by half. Whisk in the butter, parsley, and salt.
