Ingredients

4 eggs

6 -8 saffron strands ( soaked in a teaspoon of warm water )
salt and pepper
1 tablespoon olive oil
24 snails
3 small zucchini
2 garlic cloves , crushed
1 bunch sorrel
1 pint cherry tomatoes
1 lemon , zest of , grated ( save lemon for another use )

Instructions

10.Serve hot with grated lemon zest.
