Ingredients

1 tablespoon water ( or vegetable stock-original recipe used 3 Tbs olive oil )
1 medium yellow onion , diced
4 garlic cloves , minced
1 teaspoon ground cumin
1 teaspoon fennel seed ( optional )
salt and pepper
2 cups uncooked basmati rice
1/2 teaspoon saffron steeped in 1/4 cup warm water
3 1/2 cups vegetable stock
2 cups of cubed roasted sweet potatoes
1 tart apple , diced and tossed with lemon juice
4 scallions , thinly sliced
1/2 toasted pine nuts
1/4 cup apricot preserves
1/3 cup rice vinegar
1 tablespoon curry powder
1/4 teaspoon ground cardamom ( optional )
1/4 teaspoon cayenne pepper
1/2 cup water
1/4 cup oil
salt
2 tablespoons finely shredded mint leaves , for garnish ( optional )
Saffron rice with curried apricot dressing is a fusion of Indian and Middle Eastern flavors that creates a unique and delicious dish. Instructions

1.In a large pot, heat the water (or vegetable stock) over medium heat.
2.Add the onion and garlic and sauté for 5-7 minutes until softened.
3.Add the cumin and fennel, season with salt and pepper, stir, and cook for 2-3 minutes.
4.Stir in the rice, saffron and vegetable stock, and bring to a boil.
5.Once boiling, reduce the heat to low and cover. Cook for 18-20 minutes until the rice is tender and the liquid has been absorbed.
6.In a small bowl, whisk together the apricot preserves, rice vinegar, curry powder, cardamom, cayenne, and salt.
7.In a large bowl, toss together the cooked rice, sweet potato, apple, scallions, and pine nuts.
8.Pour the dressing over the top and toss well to coat.
9.Season with salt and pepper if needed.
10.To serve, garnish with shredded mint leaves.
