Ingredients

1 1/2 - 2 cups grated romano cheese
12 ounces orecchiette ( little ears if unavailable , shells are a good substitute )
1/2 teaspoon saffron

6.Simmer, stirring occasionally, until the sauce has thickened, about 20 minutes.
7.Remove the bay leaves and garlic and discard.
8.Drain the pasta, reserving 1/2 cup of the cooking water.
9.Add the pasta and reserved cooking water to the skillet and toss until well coated.
10.Stir in the cheese and the remaining 2 tablespoons of parsley and serve immediately.
