Ingredients

500 g basmati rice or 500 g long-grain rice
1 kg herbs ( parsley , dill , coriander , fenugreek , spring onion ends )
cooking oil
salt
black pepper
Sabzi Polow is a popular Persian rice dish made with a variety of fresh herbs. The dish is known for its delicious flavor and the crispy layer of rice at the bottom called the tahdig. Instructions

1.Pick and rinse the herbs, then chop them into small pieces.
2.Soak the rice in warm and salted water for an hour, then rinse thoroughly.
3.Boil water in a pot, add salt, and add the rice. Cook until it's 3/4 cooked, then pour it over a strainer and set aside.
4.In a separate pot, heat up cooking oil and fry the chopped herbs with salt and black pepper.
5.Layer the cooked rice and the fried herbs in the pot, placing a thin layer of herbs between each layer of rice.
6.Put a piece of flatbread or a clean kitchen towel on top of the pot, place the lid on top, and put the pot on the stove. Cook over low heat for 50 minutes to an hour.
7.Serve hot and enjoy!
