Ingredients

1/3 ounce saffron
2 1/4 lbs lamb
salt , to taste
black pepper , to taste
2/3 cup clarified butter
2 medium onions , finely chopped
1 tablespoon lemon juice
5 ounces fresh spinach , finely chopped
5 ounces fresh dill , finely chopped
5 ounces fresh cilantro , finely chopped
5 ounces scallions , finely chopped
3/4 cup plain yogurt
5 garlic cloves , peeled and pressed
Sabsa govurma Plovu is a flavorful Central Asian dish that can be enjoyed on many occasions - a big family gathering or a cozy dinner at home. This Pilaf With Lamb and Herbs is cooked in one pot, which streamlines the cooking process. The dish has multiple layers of flavor which come from the mix of herbs and saffron. Instructions

1.Soak the saffron in 1 cup boiling water.
2.Cut the lamb into small cubes and season with salt and black pepper.
3.Melt half the clarified butter in a large pot over medium-high heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.
4.Heat the remaining clarified butter in the same pot. Add the onions and sauté until soft and golden, about 10 minutes.
5.Add the browned lamb, lemon juice, and 2 cups of water to the pot with the onions. Bring to a boil, then reduce the heat and simmer for about 30 minutes, or until the lamb is tender and the water has been absorbed.
6.Add the spinach, dill, cilantro, scallions, and saffron water to the pot. Stir everything together and simmer for an additional 15-20 minutes, or until the herbs have wilted and the flavors have melded together.
7.In a small bowl, mix together the yogurt and garlic. Serve the pilaf hot, topped with the yogurt mixture.
