6 ounces mung beans
2 tablespoons butter
1 large onion , sliced
1 fresh green chili , sliced lengthwise
2 cinnamon sticks , broken into pieces
1/2 teaspoon ground turmeric
1/2 teaspoon garam masala
1/4 teaspoon chili powder
1 teaspoon salt
1 teaspoon ground cumin
2 ripe tomatoes , skinned and chopped
20 fluid ounces warm water
2 tablespoons cooking oil
1/2 teaspoon black mustard seeds
3 garlic cloves , chopped
2 dried red chilies , chopped
4 ounces frozen spinach , defrosted

Instructions

1.Rinse the mung beans in water and soak them in water overnight.
2.In a large pot, melt the butter over medium-high heat. Add the sliced onions and green chili to the pot and sauté until the onions are soft and translucent.
3.Add the cinnamon sticks, ground turmeric, garam masala, chili powder, salt, and ground cumin to the pot. Stir until the spices are well combined.
4.Add the chopped tomatoes to the pot and cook for 5 minutes, stirring occasionally.
5.Drain the soaked mung beans and add them to the pot. Add the warm water and stir well.
6.Reduce the heat to medium and let the dhal simmer for 40-50 minutes, or until the mung beans are tender.
7.In a separate pan, heat the cooking oil over medium-high heat. Add the black mustard seeds and fry until they start to pop.
8.Add the chopped garlic and dried red chilies to the pan and stir until the garlic is golden brown and fragrant.
9.Add the defrosted spinach to the pan and stir well. Cook the spinach for 5-7 minutes, stirring occasionally. Remove the pan from heat.
10.Add the spinach mixture to the pot of dhal and stir until well combined. Serve the Saagwalla Dhal hot with rice or bread.
