9 ounces shrimp , peeled
9 ounces mussels , cleaned
1 cup white rice
2 cups water
3 medium tomatoes , finely diced
2 medium onions , sliced
2 tablespoons olive oil
2 tablespoons ouzo
salt and pepper

Instructions

1.Rinse the rice and set aside.
2.In a large pot, heat the olive oil over medium heat.
3.Add the onions to the pot and sauté until they are translucent.
4.Add the tomatoes and sauté for 1-2 minutes.
5.Add the shrimp, mussels, and ouzo to the pot. Cover and allow to cook for 3-4 minutes until the mussels open.
6.Remove the mussels from the pot and set aside.
7.Add the rice to the pot and stir to combine with the tomato and shrimp mixture.
8.Pour the water into the pot and stir well. Bring to a boil and then reduce heat to low.
9.Cover the pot and allow to simmer for 20-25 minutes or until the rice is fully cooked.
10.Remove from heat and add the mussels back into the pot. Serve hot.
