Instructions

1.In a large bowl, dissolve yeast in warm water.
2.Add milk, brown sugar, salt, molasses, 2 tablespoons butter, rye flour, whole wheat flour, and gluten.
3.Stir in caraway seeds and mix well to form a dough. Knead the dough on a lightly floured surface for 5-10 minutes until smooth and elastic.
4.Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
5.Punch down dough and shape into two loaves. Place in two greased loaf pans.
6.Cover and let rise until doubled, about 45 minutes.
7.Preheat oven to 375°F. Brush loaves with melted butter and bake for 30-35 minutes or until loaves sound hollow when tapped.
8.Remove from pans to wire racks to cool.
