Ingredients

3 lbs fresh fish fillets ( deboned , firm bodied , mild tasting , thick )
1/4 cup white vinegar
1 large onion , chopped fine
1/4 cup olive oil
4 tablespoons curry powder
1 tablespoon salt
1 can tomato sauce
1 cup red wine vinegar
4 tablespoons pomegranate molasses ( found in import food stores )
1 dash hot sauce ( or to taste )
1/4 teaspoon garlic powder ( optional )
1 1/2 cups fresh parsley , chopped
1/4 cup of fresh mint , chopped
1 large tomatoes , sliced

Instructions

5.Drain the fish from the vinegar marinade and add to the pot. Gently stir to coat the fish in the sauce.
6.Cover and simmer for 15-20 minutes until the fish is cooked through.
7.Stir in the chopped fresh parsley and mint.
8.Serve hot with sliced tomatoes on top.
