Rutabaga Ham (Griljerad Kålrot) is a traditional Swedish dish that has been enjoyed for generations. This dish typically features a baked ham with a glaze made from breadcrumbs, mustard, and sugar. However, this vegetarian spin on the classic recipe replaces ham with rutabaga, a root vegetable that is similar in texture and flavor to turnips and potatoes. The spicy brown mustard glaze adds a unique and flavorful twist to the dish, making it a perfect choice for a cozy dinner at home or a festive holiday meal.

Instructions

.Preheat the oven to 400°F.
.Peel the rutabaga and cut it into 1/2 inch slices.
.Arrange the slices in a large baking dish, alternating with layers of chopped onion and bay leaves.
.In a small saucepan, combine the whole cloves, whole allspice, salt, and enough water or vegetable broth to cover the rutabaga.
.Bring the mixture to a boil over high heat, then reduce the heat and let it simmer for 5 minutes.
.Strain the mixture through a fine-mesh sieve and discard the spices.
.In a small bowl, whisk together the spicy brown mustard and egg.
.Pour the mustard mixture over the rutabaga slices and toss to coat.
.Sprinkle the breadcrumbs and brown sugar over the top of the rutabaga and mustard mixture.
.Bake for 30-40 minutes, or until the rutabaga is fork-tender and the top is golden brown and crispy.
